Peanut Butter Spritz


Just about everyone has had traditional buttery spritz cookies growing up. I love using the cookie press and seeing the cookies appear after a couple clicks! Of course it can be tricky using the press- too much click or turn and the cookies look bloated and distorted- but practice and perseverance does produce a rather pretty result.

When I came across this recipe for a slightly different version I thought I'd give it a try- it appeared to be a combination of two classic cookies- peanut butter and spritz. I like the taste of these cookies, peanut buttery good and delicate, less coarse in texture than a typical peanut butter cookie. I will also make the traditional spritz cookie this season, but these are a nice variation to have around to munch on also.

Here at the Grandfield house more variation is expected... and this holiday season, doing this blog, means lots of cookies to choose from! It also means extra exercise sessions for Terry and me, though we have managed to share some of our cookie bounty with others, thankfully!


Peanut Butter Spritz


1/2 cup solid vegetable shortening
1/2 cup creamy peanut butter
1/2 cup granulated sugar
1/2 cup brown sugar , firmly packed
1 egg
1/2 teaspoon Vanilla Extract
1 1/2 cups all-purpose flour


Preheat oven to 350°F.
In a large mixing bowl cream together shortening and peanut butter. Gradually add sugars, blending well.
Add egg beating until smooth. Add vanilla. Set aside.
Stir flour into peanut butter mixture.
Place dough into cookie press and press cookies onto ungreased cookie sheet.
Bake 6-8 minutes or until lightly browned around the edges. Remove cookies from sheet -cool on rack.
